Quintero Salami National Festival

The three-day meeting in September pays tribute to the local producers of the salami.

The National Festival of salame Quintero is a festival that brings together the mercedcans and visitors around a folk festival, steeped in history, traditions and flavor. It occupies the calendar of the popular festivities in the province of Buenos Aires and every year has higher expectations.

The Municipality of Mercedes and the celebration spree commission are responsible every year to stage this festival with an elaborate program in which there is no shortage of folk shows, activities related to the field and regional products. The protagonist is the quintero salame, a specialty achieved with the work and the joint effort of a fledgling people come with immigration.

Like any local party, its origins go back to the ideas that some neighbors had that saw what the family and collective values ​​were that kept the preparation of the quintero salami. It was the Italians and the Spaniards who arrived at Mercedes who gave the elaborated product their identity. The immigrants who had arrived at the end of the 19th century and the beginning of the next one settled in “fifths” of the periphery and introduced the elaboration of chacinaados, a tradition that they brought along with their recipes as careful as they were secret.

In winter, pigs were slaughtered and women prepared sausages for family consumption. After a time of maturation, it was time for the meeting, for gatherings and tastings. From these meetings the idea of ​​competing for the best salami in the region was born. The first edition of the party was in 1975.

The proposals grow in quality over the years. Each edition summons more visitors with its food court, its regional and craft products fair, country activities and local and national artists.

The excuse to meet those founders of the tradition moves with the meetings of the National Fiesta of Salame Quintero and there is no lack of reasons to reach Mercedes and enjoy the quintero salami, spend a relaxed time, breathe country air and enjoy the activities proposed by each new edition.
